These dishes are special so, you can prepare and serve them on a regular basis, did you know?!
Whole Lemon Chicken
This recipe was given to me by my husband's grandmother.
Ingredients
- 1 whole chicken
- 1 lemon
- 1 teaspoon crushed bay leaves
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 4 medium potatoes, peeled
- 1 can of mushrooms, drained
- 1 teaspoon mixed herbs
- 1 little oil
1. Pour the juice of the lemon over the chicken. Rub the spices over the entire chicken.
2. In a casserole dish, place the chicken, breast downwards, on top of small chunks of potatoes and the sliced remainder of the squeezed lemon.
3. Fry the mushrooms in a little oil with the mixed herbs. Add to the casserole dish.
4. Cover and bake for about 40 minutes at 200 degrees centigrade.
Fish Curry
This is the traditional recipe that my own grandmother used to prepare for Shabbat and for Chaggim.
Ingredients
- 1 teaspoon each of the following powdered spices:
ginger, garlic, black pepper, turmeric, mustard seeds.
- 1 teaspoon tamarind
- 2 teaspoon coriander powder
- 2 teaspoons cumin powder
- 2 big onions, diced finely
- 1 cup water
- 3 ounces desiccated coconut
- 4 tablespoons oil
- ½ cup curry leaves.
- 2 cans chopped tomatoes
- ½ can tomato puree
- 2 cups water
- 1 kilo of haddock, or any white fish, filleted, in potions
- 10 small green chillies if you want it really spicy!
1. Put the spices and water into a blender and blend.
2. Add the onions and blend.
3. Add the desiccated coconut if it is coarse (if it is fine desiccated then there is no need to blend).
4. Heat oil in a pan and cook the blended spices, onions and coconut for a few minute on a medium heat taking care not to let it burn.
5. Add the chopped tomatoes and tomato puree and 2 cups of water. Cook till it is a thick sauce on a medium to low heat.
6. Add fish pieces and chillies if you chose to use them. Cook for a further 20 minutes. Serve with white or brown rice.
