This snack is really delicious and sweet - it will be enjoyed by all those who serve or eat!
Mrs. Tauber's Peanut Chews
A recipe shared with my mother by a childhood friend.
Ingredients
- 1 bottle light corn syrup, or, a 1 lb container of Golden Syrup plus 1 cup of water
- 2 cups of sugar
- 18 oz jar of peanut butter
- 13 oz of puffed rice cereal
- 1 cup of roasted, shelled peanuts (optional)
- 8 oz melted chocolate
1. Bring to the boil the sugar, the syrup, the peanut butter and water if used, mixing all the time.
2. When it starts to become thick and sticky, like toffee, take the pan off the fire and add the puffed rice cereal and peanuts if you chose to use them.
3. Mix it very well.
4. Pour onto a tray lined with parchment paper and smooth the top. The best way that I discovered, is to place another sheet of parchment paper on the top and roll it smooth and flat with a rolling pin.
5. When the mixture has cooled, pour the melted chocolate on top and make a design with a fork if you want.
6. Slice into bars when cool, using a sharp knife.
